I am so excited for this week's meal plan! I received my copy of Trim Healthy Table last week, and many recipes on the meal plan are from that book. If you don't yet have your copy, do yourself a favor and order one right now! It is so good and is full of many family-friendly meals and recipes that do not require special ingredients. The gals over at THM have really outdone themselves with this cookbook!!! I highly, highly recommend this cookbook. It has a great overview of the plan (like a cliff notes version) in the first three chapters of the book that is great to read and review.

Here's what we'll be eating this week:

Monday:
B - (2) scrambled eggs cooked in butter with strawberries on the side and Sweet & Spicy tea to drink (S)
L - Cream & Crunch Apple Tuna Salad with water to drink (E) pg. 314 in Trim Healthy Table ***I do not like tuna fish so I am going to substitute a can of chicken for the tuna. The shopping list reflects this.
S -  cheese stick and a small handful of almonds with Cider Pop to drink (S)
D - Chicken and Bacon Rice Casserole with steamed broccoli on the side and water to drink (S) pg. 140 in Trim Healthy Table  ***I'm steaming frozen broccoli

Tuesday:
B - Pint Oat Jar with Sweet & Spicy tea to drink (E) pg. 343 in Trim Healthy Table ***This makes 3 jars of oatmeal
L - leftover Chicken and Bacon Rice Casserole with water to drink (S)
S - celery with peanut butter with Cider Pop to drink (S)

D - Easy Pizza Casserole with fresh veggies on the side with Grape Zevia to drink (S) pg. 126 in Trim Healthy Table

Saturday:
B - Thin Mint Shake (S)
L - Whoop Whoop Soup with water to drink (S) pg. 148 in Trim Healthy Table ***This will feed my whole family two meals.

D - out

Sunday:

For those of you who follow me regularly, I'm sure you noticed I haven't created a new meal plan pretty much all summer. I needed the break and down time to focus more on my family and just relax a bit. I never really took a break after having a baby in January and it finally caught up to me. 😕 Thanks for your patience and understanding. I'm back at it now and excited for new meal plans, tips and recipes this fall!

I'm also excited about Trim Healthy Mama's new cookbook, Trim Healthy Table, that is releasing next week on September 12! Have you pre-ordered your copy yet? If not, be sure to do so. It looks like another beautiful cookbook with loads and loads of new recipes. I will be adding some of their new recipes into my meal plans over the next few weeks.

Here's what we'll be eating this week:

Monday:
B - (2) Mufflets with strawberries on the side with Sweet & Spicy tea to drink (S) pg. 237 in the THM cookbook **The Mufflets recipe makes 16. I will be eating them for a couple of days, as well as my husband a couple of my kids. Easy grab and go breakfast for busy mornings!
L - Just Like Campbell's Tomato Soup with fresh veggies on the side with water to drink (S) pg. 112 in the THM cookbook
S - (2) Chunky Cream Pops with water to drink (S) pg. 374 in the OLD THM book **These make a lot, so be prepared to have your family or friends eat some too.
D - Grilled chicken, brown rice and steamed broccoli with Cider Pop to drink (E)

Tuesday:
B - (2) leftover Mufflets with strawberries on the side with Sweet & Spicy tea to drink (S)
L - Salad with leftover grilled chicken (from Monday night) topped with Cesar dressing with water to drink (S)
S - (2) leftover Chunky Cream Pops with Cider Pop to drink (S)

Wednesday:

L - Hearty Two Bean and Lentil Chili with water to drink (E) ***This makes a lot!!! This will feed my family of 6 two full meals. If you are a smaller family you may want to cut the recipe in half or freeze and reheat later.
S - (2) leftover Chunky Cream Pops with water to drink (S)
D - Sweet & Spicy Stir-fry over quinoa with Cider Pop to drink (E)

Thursday:
B - Vanilla 000 Yogurt mixed with a diced apple and cinnamon with water to drink (E)
L - leftover Hearty Two Bean and Lentil Chili with water to drink (E)
S - (2) leftover Chunky Cream Pops with Cider Pop to drink (S)
D - Cabb & Saus with green beans on the side with water to drink (S) pg. 58 in the THM cookbook

Friday:

S - Cottage Berry Whip with Cider Pop to drink (FP) pg. 374 in the THM cookbook **I'm making a double batch, freezing half and will eat the rest tomorrow. Take it out of the freezer about 10 minutes before you want to eat it.
D - Trim Zuppa Toscana Soup with water to drink (S) pg. 86 in the THM cookbook **This makes enough to serve my family two full meals.

Sunday:

Easy Homemade Liquid Hand Soap

Over the last few years I've been trying to eliminate chemicals from the products that my family uses. This is no easy task, and quite frankly I haven't been able to find a replacement for all things yet.  I'm happy with many of the changes that I have made for my family thus far and look forward to sharing some of these ways with all of my readers.

One of the easiest products to change over has been our liquid hand soap. Not only does this recipe leave out nasty chemicals, but it is cheaper than buying the store bought counterpart. A couple members of my family have VERY dry skin, and using this hand soap has greatly improved their skin. That makes my mom/wife heart happy knowing that by switching just this one product has made a difference in their health.

This recipe is incredibly simple to make and takes very little hands on time. You can use Mrs. Meyers Bar Soap (any scent you choose is fine) or a cheaper brand such as Ivory soap. If I use Ivory soap, I like to add in some essential oils to give it a nice scent. In the fall and winter I like to use peppermint and in the spring and summer I like to use a combination of grapefruit and lemon essential oils. They make the soaps smell fantastic!

Here's what you need to make the soap:

  • (1) bar of soap, any brand of your choosing
  • grater
  • a large pot that can hold more than 1 gallon of water
  • 1 gallon of water
  • containers to hold the soap once it is made - I have 4 pump containers and a pitcher to hold the rest
  • essential oils, optional
  • kitchen funnel, optional


How to make the soap:
  1. Bring 1 gallon (16 cups) of water to a full rolling boil.
  2. While the water is coming to a boil, grate your soap onto a cutting board or plate.
  3. Once the water has come to a boil, add the soap, turn off the heat and start stirring immediately.
  4. Continue stirring until all the soap has melted and dissolved into the water.
  5. Remove from the burner completely and let it sit. Stir the soap every 10-15 minutes for the next hour.
  6. Let the soap cool completely. It will start to become more gelatinous. If you'd like to add essential oils, this is the time to add them.
  7.  Divide the soap into containers. I have found that using a kitchen funnel makes this much easier.
